    To certain extent, this is true of any species - even Platy frys. ;) I have clearly seen this when I was raising mbuna frys too.

    If you keep your sand to 1-2 inches, you are ok against aerobic pocket buildups. I personally like sand more than gravels and they are easy to maintain.     Platy doesn't need algae or salt as others have mentioned already. Plants are not required either but any fishes will appreciate their presence. It is a bit over-stocked now given your tank size, so you may need to do larger water changes. 50% weekly would be good. And unless you have 3 males...

    How high is your water level? I'm not familiar with your filtration but if it works anything like a typical HOB filter, then you can raise your water level - this will significantly reduce the "water fall effect" without reducing your overall filtration.

    For filters, yes, canister filter will be definitely better for you. I'd suggest either Rena Filstar XP3 or Eheim 2217. Either of them will give you plenty of filtration capacity for your future needs. I'm personally a Eheim user myself. :)

    You should read up a bit more about raising Discus. They need much higher temperature than normal, and their diets are also a bit more difficult than your average tropical fishes. Its cool to see them breed though.

    I do 30% weekly. If I feel a tank is overstocked, then I do more. Even on a lightly stocked tank with plants, I try to keep at least 20% weekly.

    Have you really looked through every area of your tank? Once dead fish start decompose, it will become even harder to find it. You may even experience an algae boom as a result of that. Better to remove it as soon as possible. Are any of your fishes flashing by any chance?
