Should I turn off the bubbles at night? Or does it matter to the fish?

99 times out of 100 a bubbler isn't needed. They do add aeration to the water but your filter serves the exact same function. If you like the look of them then keep it running, if you're indifferent then feel free to take it out.
They are good to keep on hand though for medications and heat treating ich.
There can only be soo much oxygenation in the tank. If you look at your fish and they are gasping at the surface then that is a sign there isn't enough aeration in the tank.
If you see they are gasping at the surface then some added surface agitation would be beneficial in that case which a bubbler does.
On the other hand bubblers are bad for plants as it will gas off all the co2 in the tank.
