DIY CO2 Bubble Counter

I read that it is better to use mineral/vegetable oil instead of water in DIY bubble counters. How fast does the water in the counter evaporate and how much/if at all does it effect the CO2 system?
 
I have no experience with it myself. But I hear and seen from other people who are advanced it aquarium and co2 say waters terrible and you can and should use mineral oil or vegetable oil. But I see more of mineral oil being used. Hope that helps with your decision.
