Interested in getting convict cichlids, but how will I prevent breeding

So my new 50 gallon salt water tank is almost cycled, and the yellow tang and clown fish I have in my 20 gallon will soon have a new larger home. I want to use the 20 gal as a freshwater tank (I may get a bigger one though depending on the situation) and I'd like to get some chichlids and have been reading that convict chichlids are good starters. Are there any other good starter chichlids? I've read lots of articles about convicts breeding constantly, and while that's a great thing, I don't want some population explosion. Is there any way to make two stop breeding, is it as easy as getting two males or females. I'm worried it will cause fights. I just want to make sure I do this right and not wake up a massive amount of new fish lol.
