I have a 3 gallon tank that is cycling at the moment. Need ideas as to what I can stick it with?

I think you should stick it with shrimp and maybe a betta

+1 for the shrimp and betta idea. Working out for me so far, and looks nice with live plants.

unless you get into the really small nano fish, shrimp/betta/dwarf cray are about it.
