Nitrite gone every 24 hours

I am towards the end of my 5g seeded fishless cycle. It has been about 5 weeks. I have easily been processing 2ppm ammonia in 24 hours for 3 of those 5 weeks.

The nitrites have been high around 5ppm for that same time. For the last few days the nitrites have been 0 in the morning and decided to water test every 12 hours to see if the cycle is really finished.

The last 2 days the nitrites will go up to 2ppm in 12 hours after the morning dose of ammonia but will read 0 in 24 hours.

Should nitrites be constantly 0 in a 24 hour period or is a spike 12 hours later normal?
 
If you're reading 0 ammonia and 0 nitrites after 24* hours after dosing 4 ppm Ammonia, you're cycled :) That was the hard part! Congratulations! Remember, the day before you buy fish turn your thermometer to the desired temperature and do a 90% water change. Enjoy your fish!
