Not sure what type of snails they were I got them from my dad and he didn't know but they were all yellow. I saw my gold barbs eating the rest of him (the other 3 were already gone by now which I didn't know how they died or where they went)... Are gold barbs known to do this? My other tetras never bothered my snails nor did my ram, pleco, kuhlili loach, or Cory's..

I would say the snails died and the barb saw a chance for a meal. Most fish will eat any dead tank mates they find. I have had two shrimp die and within minutes the other tanks occupants ate them.
 
I had a mystery snail die over night a while back, by morning there was literally a little scrap of flesh left - and my tank was filled with Hoplo catfish and Rosy barbs at the time. Fish will indeed make a meal out of anything dead :)
