Substrate depth for non planted tank?

How deep should I go?

Just a dusting? A little more? 1-2" ?

I will have lots of drift wood and rock in the tank if that matters. Also only angelfish.

I always do 2-3". With sand, 2-3" should be fine. Since a lot of plants like to have place to put their roots, this is a good depth. Too deep isn't good either because a lot of gases build up under the substrate and are a great place for anaerobic bacteria to grow and reproduce.
 
I have a non-planted shrimp tank and I have a very thin layer (1/4") of black sand in there. IMO the deeper the layer, the more amount of debris that can potentially be trapped in there. I'm not referring to fish waste, per se, but the very fine, silty waste.
