Maybe its uncured live rock or live sand, this is really bizzare...
I find it hard to believe a single chromis is making that much ammonia in a few hours to kill it. Especially since your testing has shown zero ammonia.

Test the water from the lfs after acclimating to see if there was ammonia
From what i understand, a seemingly perfectly healthy fish while at the LFS, makes it's way into the OP's tank and then dies in a short time. I would look to the OP's tank, and not the store it was bought from. I think it pretty much rules out that it was the store's fault.
I'm just saying that i doubt the LFS's water is the culprit.
