How can I tell if I have a mated pair of angels?

They will hang out together, and look for a place to spawn. The spawn is often the key, but a mated pair will often swim around together too.

You'll see them mating/guarding eggs.

+1 they will always be together. Eventually they will pick a spot and start cleaning it real good. This will be where they will lay their eggs

Does it matter if there are other angels in the tank it's a 55 with 7 angels , moderately planted, all live plants. One is keeping the others away but I can't tell if any are male or female

They'll pair off and mate and defend the eggs, might have some trouble rearing the fry in the tank though with a lot of tankmates around.

The dynamics depend partly on the individual fish you have. Keep an eye on it and watch for nipped fins, signs of stress, or outright aggression. With 7 of them, there is a possibility you will have to re-home a couple, but you can wait and see who gets along with whom.

yea 7 is a bit to many angels in a 55 , they should have about ten gallons a piece
