What levels do I want my aquarium to be at

For an established tank, ammonia, nitrite, and nitrate should be 0/0/10-20 ppm.
Your pH can be anywhere from 6-8.

Of note, when performing the Nitrate test, really SHAKE bottle #2 as instructed for the full 30 seconds and shake the test tube for a full minute after adding bottle #2. Shake it like you mean it! Do this every time for consistent results.
Keep a log of your test results. It will come in handy later.

I use an App on my i phone called AquaPlannerPro to record all my water tests and planned maintenance. The water tests can be pulled up as a graph which is great to spot trends. I wouldn't be without it.
