Inherited tank

My husband and I are taking over a restaurant and there is a 55 gallon tank on the dining room. I couldn't even tell you the last time it was cleaned. There are 5 or 6 fish in the tank. I think I need to empty everything out and start from scratch. Is there any way to save the fish during the process? Help!

I've moved many tanks. Depends on how long your breaking it down. I've put the fish in a rubber maid tote with an air stone/ pump for several hours before and had no issues
