My dad got a 30gal aquarium that's currently going through a cycle with 3 platys. The platys have been in there for about a month and seem to be doing good. I check on the tank every 2-3 days or so and that's when I do 50% water changes while it cycles. Current water parameter readings are: ammonia 0, nitrites 1ppm and nitrates are between 0 - 5ppm.

He told me that recently they started to have some long, 3" poop tailing them. I asked what color is the poop. He told me, usually light brown to light yellowish. He feeds them once a day. The diet consists of tetramin tropical flakes, tetracolor granules and blood worms.

Does stringy light colored poop automatically means internal parasites? Or do they need a diet adjustment?

It can be caused by stress, and 1ppm of nitrites can do that. I can also be parasites, but I don't know. Try doing more water changes, and see if that helps.
