Nitrate levels went up but ite are about the same

Im around 1.5ppm of nitrite but I noticed my nitrate levels just skyrocketed to 80. Does this mean my nitrite should start its decent to 0? seems like most my tests so far are consistent only changing very small daily. I started spacing out my tests every other day.

Correct. Wait until the NO2 drops to zero, then do a large water change to help manage the NO3. Cycle should be just about over.

Also I have a question. My pH is consistenty 7.8. I know most people like at LEAST 8.0. Is their anyways to increase this w.o a solution? Or do I just need to go get some PH increaser?

Your Ph should come around once you start doing regular water changes.
