I usually do it with alcohol. If the concentration is high enough (pretty VODKA much straight out of the bottle) it will only take a few seconds. The good thing about this too is that I don't have to place a nasty sick fish into my freezer with all the food to completely freeze him.

Though I've never used it, I've heard mention of using clove oil. This is also supposed to shut the system down.

I think you missed the best and most humane one.
put it in a bag and a hard and sharp blow onto the bench.
no stress, no mess and really effective.

I just cut the head off, very quick and humane. Working in a pet store, I have to do this too frequently

I'll third the blunt force trauma method here. Very fast method that leaves little time for any pain or emotional damage fish may or may not be able to experience.
