I know it's a dark topic. But what methods to people use to "put their fish out of their misery", if say they are suffering from a disease that can't be cured or is beyond cure.

I'm just curious what methods people use to do this.

Some like to take a sharp knife and quickly cut the head off. Others like to fill a bowl with ice water/cubes. The cold water quickly shuts down the fishes system and kills it. Some also like to spike this ice water with vodca.

what about putting the fish in a little tank water in a tupperware container, and then sticking it in the freezer. will the gradual drop in pressure be easy on them as well? seems like dropping them right in ice water would be quite a shock.

Freezing is the most humane way, this fish never knows what hits them because they just get tired and go to sleep. One sleep they never wake up from. However theres no pain involved.
