I bought a couple of brazilian Swords a couple of weeks ago. One of the plants came with an off shoot with baby plants just forming. A couple of weeks later and the roots on the babies are getting pretty long. I have a couple of questions.

How do I separate them? Just nip them off and plant in the substrate? How long should the roots be before I separate them?
 
yep, just separate them and and plant.
as an alternate method, you could weigh down the runner with a rock, and allow the plants to naturally take root, after which you would remove the excess runners with some scissors and a couple quick cuts.
