Okay so yesterday around 5 I tested my water. I had 1ppm ammonia 5-10ppm nitrite and 40 ppm nitrate. Today I have 0-.25 ammonia. 5-10 ppm nitrite and 20ppm nitrate. Do I need to add more ammonia, what is my next step?

How many weeks has the tank been running . I asume your doing a fishless cycle. . If thats the cause i have read that u should keep it around 1 to 2 ppm . But i will let some of the more experienced and knowledgeable people on this site hone in .

I take it your doing a fishless cycle. In the case you would want to bring your ammonia up to around 4.....When I did it I did about 3-4 ppm.
