I've got a 30g standard tank and I've had my "fun" with breeding Convicts. What should I try next? I'm wanting to do something that's more interesting/attractive

Any specific variants I should look into and which kind of substrate do they prefer? Also, are they aggressive when they spawn, and how many can I comfortably keep in a standard 30g tank?
