I mean i havent measured my Nitrate level but im sure its a nitrogen/potassium deficiency as im getting curling and yellowing of the leaves
Grab a nitrate and phosphate test. That way you know (roughly) and can adjust dosing as plants grow.

I dose EI to recommended by Rotalabutterfly calc. I don't take fish into account and never have. Never lost a fish to nitrates yet. Lost a few to messing with the GH and co2 but never to nitrates. Mine sits on the high side to be honest 20-30 most of the time.
Kno3 mainly for the heavily planted and pressurised co2. I'd say it's more likely a calcium issue. I had the same systems when low on mg and calcium. How's your water? Is it soft from the tap?
My tank is lightly stocked tho. I've got 8 tetras 3 SAE's 2 otto's 2 angels in a 60g. I've always been lightly stocked as the fish don't really interest me lol
