While cycling a new tank doing a fish in cycle should I be cleaning my filter? I'm in the nitrite cycle now and have been for about a week doing 2 75 pwc a day to keep it down.

Nope, don't touch it 
A month or two after the tank finishes cycling then you can start cleaning the media out in old tank water once a month during a water change but for now I'd leave it alone.
