I have some Amano shrimp that I bought on tuesday and one has moulted so the dumb question is.... Will they eat the old carapace or do I need to fish it out?

Yes they will eat the "skin" that molted off. No need to fish it out because this will give you an idea on how your tank can break down things.

When my Lobster molts, his shell breaks down really fast... 
Do you think the calcium from shell gets reintroduced to the water?

I don't think that the shell would be around long enough to decompose, but when the shrimp eat it yes they get the calcium from the shell.
