I'm replacing an Aquaclear500 with a new eheim 2075. How long should I leave the aquaclear in there before I remove it? A month?
 
I would just put the aquaclear media in one of your canister baskets. Then you can remove the aquaclear.

A month should be plenty of time. Might get away with 2-3 weeks.
Any chance of being able to put some or all of the media (sponge, ceramic) from the AC into the Ehiem? If so, then it might cut down the transition time from a few days to (possibly) and immediate switch.

Not really. But could I swap half of the media in my other eheim so they are bith 50/50? Would that cut the time down toom

Yes, any media from the old filter in the new filter will help. The more the better. How much time it will cut down is hard to say. You will have to test daily to determine this.
