So my fancy tailed guppy keeps trying to mate with my sunburst platy. Could that actually happen or is he just a horny fish? haha

No, they cannot crate a hybrid. They are from two different families, and are too different genetically.
Some fish that could hybridize would be:
Guppy X Endler
Platy x Swordtail

Actually Guppies can hybridize with Platies.
