Was the fish new or did you change anything? Bloating like that is often caused by stress.

I introduced like 7 new smaller fish I think that day.
Maybe the tank is over crowed.
It is a 55 gal. and I have like 16 african and south american cichlids.
I know I have to separate them at some point...

Yeah that might do it. Your tank looks great but you should only really add like 3 or 4 fish at a time.

As far as your tank size and the amount of fish you have i dont think your overstocked . It would also depend on the size your fish get . But just lookin at numbers your tank is light/medium stocked. I have 21 africans in my tank and its considered overstocked.
