Is it normal when my alkalinity carbon is @ 214 or a little higher and do I have to check ph And what it the number I have to maintain I heard about 8.5 or 7.0

I'm having trouble understanding the ph thing I got everything else except that sorry for my ignorance.

Yes there are probes or Hanna checkers which give you digital readings.
