What is this??? Very concerned for fish

I don't test my water because he has been happy and healthy for 5 years now. Water level is about 72 out of 75 & I feed him 20 large feeder fish every week mostly like 2 to 3 a day

How much water do you remove/replace every week?
How do you know that that the nitrates are not too high in that tank without testing it? Nitrates will build up if not diluted by water changes.

I change carbon filters every week and 10 gallon changes

Given the large amount of waste produced by this fish and the very small amount of water being changed, it would appear that the water parameters are not on the healthy side. Of course I can on speculate since the water has not been tested. Changing somewhere between 25-40 gallons a week might be more appropriate. Maybe even more than once a week. Testing the water for ammonia, nitrite, nitrate, and pH would be helpful.
The fin rot or fungus on the tail may have been brought on by stress leading to an impaired immune system caused by poor water conditions.
