looking to start a 10 gal. thinking about a planted tank. any cool ideas?

Do you know about cycling? You could do two dwarf puffers
Or a small community tank: 1 sparkling gourami, ember tetras, shrimp
Or a betta and snails

could i do 1 dwarf gourami and 3 platys? or 1 dwarf gourami and 5 neon tetras?

I don't think so for a fish-in. Platies produce a lot of waste, so I believe a 20g would be more suitable. A dwarf gourami and neon tetras aren't really suited for a fish-in. Due to the neon's activity I wouldn't say they belong in a ten gallon. That is debated though. I would stick to small livebearers for a fish-in. Ie: guppies and endlers. There's other tetras and schooling fish better suited to a live in a ten gallon

i have never done a fishless cycle. can anyone explain it to me?

When you fish in cycle, you use fish waster to produce ammonia, which is "food" for the beneficial bacteria (bb). In a fishless cycle, you add pure ammonia to the tank. Fishless is simpler, less work, and generally faster, plus you can fully stock your tank when you are done, the only downside is you have to look at an empty tank for a month.
