I have a 5 gallon tank with two Mickey mouse platys in it now. What are some other fish that would do great with them?

not to rain or your parade but i think platies need a larger tank than just a 5 gallon

I agree and would recommend a small collection of some pretty tetras such as flame tetras, serpaes, black skirts, hatchetfish, bleeding hearts, neons, cardinals, etc

Actually for once I did my homework and 5 gallons for platings is just fine.

As far as fish go I'd say your stocked. Have you considered adding some shrimp or snails?
All those tetras mentioned above need schools of 6+ and a tank larger than a 5g.

Would shrimp bother the fish???

No I'd be more worried about the fish bothering the shrimp! :) try some ghost shrimp or cherry shrimp. Provide them with some cover so the fish don't bother them too much and it should work nicely.
