could I have a school of corries and some red cherry shrimp in the same tank.

Yes corries have small mouthes and aren't agressive so it should't be an issue.

I have both in the same tank and they ignore each other.

Never done it, but I hear lots of people say that it works. They are one of the relatively few "shrimp safe" types of fish to keep simultaneously with shrimp without having to worry whether or not your shrimp will end up as an expensive meal.

would the shrimplets be safe too?

They should be fine. They are capable of moving extremely quickly when they need to. Just try catching them with a small net if you don't believe me.

I've never seen cories actively hunt shrimplets, but I'm sure they'd eat one if it just sat still (which they don't).
