Dwarf Sagittaria with cory cats and mystery snails

I am planning to cover the entire substrate of my 20 gallon high aquarium with dwarf sagittaria and wanted to know if cory cats and mystery snails will still be able to find food in it and if they will be happy with it?

What type of substrate are you using. IME corys and mystery snails frequently uproot plants in most substrates when searching for food.
 
I keep cories in my 29 that has a carpet of dwarf sag. They've never uprooted any thing. Also they seem to find food in it pretty well.
