How to trim Mexican Oak Leaf?

Hey everyone! Just asking how to properly trim Mexican Oak Leaf plants because I got them on Monday from my lfs and they are already growing lol. A couple are even growing out of the water and almost touching the light! Haha here's a cpl pics to show.

There you can see them growin out of the water

Nobody has any advice on this? I don't want to trim it wrong and harm the plant.
 
You can clip it wherever you need to. The bottom half will put new shoots up just above the highest set of leaves and the top half will continue to grow out of the center.

Ok thanks very much! So pretty much jus trim it in the middle for example and replant the top?
