How long does it take a protein skimmer to break in?

Anywere from a couple days to a week. My hydor 405 performer skimmer said about a week. That was the max, it took any skimmer I had to break in. After that I worked better then my old one.

Mine both took about 2 weeks to start producing the foam I wanted.

Depends on the skimmer some can start producing skims right away some can take a week or two...
