Would a protein skimmer work in a freshwater setup? From what I've read it just collects unwanted organic material but I may be wrong.

Not in a freshwater setup. There is no buildup in fw like there is in sw. You could try a surface Skimmer in fw if you have a biofilm buildup but its really not necessary as a power head or surface agitation will work just as well.

There is no reason to have a protein Skimmer in a FW tank. It is overkill
