I've been having some trouble with my tank's temperature. In the morning the temp will be around 77.5 but during the day until sundown it will rise up to 80.5 before slowly going back down again to 77.5 by morning.

Right now I'm still cycling the tank although I'm almost done with it. I'll start stocking it in a few days. But I'm just afraid that the fish might stress a lot with the temperature fluctuating like that.

I'm not using any heaters either. Is just the water temperature where I live is around 75-76.

What's a safe fluctuation within the space of 12 hours?

A couple of degrees should not be a problem as it is a gradual rise and fall. That's probably just like a natural rise to the fish, if they were in the wild they would see that occur everyday as the sun heated the river/steam/pond etc.
