I have a 10g RCS tank I only have 8 and one amano.

My question is, how much molting is too much? Every day I find atleast one exoskeleton floating around today I found 3. I know molting is normal but is there such thing as to much? Will it kill them?

It mostly depends on the water temperature I think. Warmer water is going to encourage a faster life-cycle for them, hence more frequent molts.

Okay thank you. What's a good temp to keep them at?

For my shrimp tank, I just have a regular ole Tetra heater in there, so whatever temperature that those things maintain the water works for me.

If they are young and growing sometimes very frequently. I would make sure you are feeding an invert food like Hikari Crab Cuisine or Shrimp Cuisine and add some cuttlebone.
