I'm planning to do a 55 gallon gallon and am worried about overstocking. I'm going to be running a canister filter rated for 120 gallons but I'm not sure if it's enough for what I want. Stocking so far will consist of 5 discus, 15 cardinal tetras, 2 bristlenose plecos, and 3 khuli loaches. Is this too much?

55 gallons is too small for five full grown discus. You need at least 10 gallons per discus. Also, ideally, discus should be in groups of 6 or more. If you have young ones, they will do ok until they grow up. So yes, you are overstocking.

As far as I know discuss either two or six or more so your tank is small to keep so many discus.
