Just got the API test kit. It confused me with the add continuous amounts of drops tell the water turns yellow. But I have done these drops and the water never turned yellow I did up to 7 drops what's going on am i doing it wrong or am I just miss lead on the directions given and what does it mean if my Carbonite hardness is off the charts will it harm my plants my fish seem to be doing just fine I'm not quite sure what to do in this situation

Are you talking about the liquid kH test?

Are you capping the vial and turning it each time to mix it?

Just looking at mine the API KH and GH chart goes up to 12 drops (12 dKH or 215 ppm). Usually I can get KH but my GH is off the scale (although it is an old bottle the lfs gave me).

Maybe your water is more than 7 dKH° ?

You add 1 drop, you shake, 1 more drop, shake, repeat until the solution color change. My kH API Test kit is working very well (my tap is 2 dKH).

It is possible that your tap water contains a lot of carbonates. What's your PH ? It must be high in this case. (More than 7)
