Lemon jake peocock? Or maybe a red top.

Here is the kind I want. He is in an assorted peacock tank. What peacock is he?

And I could have 10 to 12 of these? Is there a male to female ratio I need to worry about?

Yes multiple males without at least 4-5 females each will likely kill one another. Also if you do more than one male of each species one will either die or suppress his colors to the dominate fish. You could get 10-12 if you want with two males the rest uncolored females and one of the males really only showing his colors. Females don't show any color and are often brown or grey.
 
What I would suggest is a male only tank. Try to limit yourself to one fish per species. This will have all males be most dominant of there species, showing better color. And will all males you will have great color in general. I had one female peacock in a male only tank and she was an eyesore
