I have a 20 gallon tank that I will be setting up in a few months. I am thinking about going with live plants, but need ones that will stay small and not take over the tank. Suggestions would be appreciated

Java fern and anubias wont grow out of control. Marimo moss balls. All easy to keep, minimal maintenance and low demand.

Thank you for your advice. How many of the plants you listed should I put in the tank?

It doesnt sound like you want a heavily planted aquascape. Just start out with 1 of each, you can easily add more over time if you wanted. With the java fern and anubias you can even cultivate new plants from the original ones if you wanted.
