Hello does anyone know the name of this plant? (Middle plant)
Or the proper way to prune it, I like the hight but the leaves are flopping over the top

Looks like Hygrophila corymbosa 'angustifolia' (aka: hygro willowleaf).

You can cut the stem at halfway point and re-plant the tip.
